You don’t need to be a Chef de cuisine in order to cook your fresh fish. All you need to have is basic cooking skills and a little bit of patience.

After you catch your fresh fish you can prepare it immediately for you to grill. Seasoned it with salt and you can add other spices if you like. You can put minced onions and tomatoes in your fish belly for better taste. You can opt also to put some oyster sauce in its belly. Before putting your seasoned fresh fish in the grill pan add some oil on both sides so that it will not stick to your grill pan.

Poached fish with cucumbers
Poaching fish is the slow cooking of your fresh fish in liquid which can be a broth, wine or plain water ideally for firm fish like salmon. Poaching makes the fish tender and tasty. This is considered one of the healthiest cooking for fish because it does not use oil.
For this recipe you’ll need the following ingredients:
- 1 teaspoon salt
- 2 cucumbers, peeled, halved lengthwise, seeded, and chopped
- 1 cup whipping cream
- 2 tablespoons prepared mustard
- 2 teaspoons chopped fresh tarragon
- 2 cups white wine
- pinch of salt to taste
- 1 bay leaf2 (3 ounces) fresh tilapia fillets
Sprinkle a pinch of salt over the cucumber pieces; allow sitting for an hour. Strain the liquid from the cucumbers.
Mix the whipping cream, mustard, and tarragon in a saucepan over medium heat; add the cucumbers and simmer in 8 minutes.
Pour the wine into a large skillet over medium heat. Season with salt and add the Bay leaf. Bring the wine to a boil. Lay the tilapia into the skillet, reduce heat to medium-low and cook until the tilapia flakes easily with a fork, 8 to 10 minutes.
Serve your fish with cucumbers on the side.
